The 28th Special Exhibition Doing Fieldwork on Fermented Foods in the World
Mankind has been producing a variety of fermented foods in various parts of the world since long before anyone knew about the mechanism of fermentation. In order to understand the culture and technology of these fermented foods, researchers from Nagoya University and other institutions have been doing "fieldwork" around the world. In this exhibition, the results of their fieldwork around the world on the human activities of producing and using fermented foods, and the relationship between fermented foods and society are presented.
